Braised Beef with Soybeans

Learn how to make tender braised beef with soybeans using short ribs and dried soybeans.

Ingredients

500 g beef short ribs, 250 g (about 1 1/4 cups) dried soybeans.

Seasonings

Salt, cooking wine, soy sauce, sugar, scallion segments, ginger slices, star anise, fennel, and peanut oil, all to taste.

Instructions

1. Rinse the beef, boil it in a pot of boiling water for 30 minutes, then drain, rinse, and cut into cubes; pick over and rinse the soybeans, then dry-fry them in a pan over low heat until fragrant.

2. Heat oil in a wok or pan, add the beef cubes and stir-fry until they change color, then add salt, scallion segments, cooking wine, soy sauce, ginger slices, star anise, and enough water to cover; bring to a boil, add the soybeans and bring to a boil again, then reduce the heat to low and simmer until the beef and beans are tender and fully cooked, season with additional salt and sugar to taste, and serve.
