Beef Chow Mein

Ingredients

300 g (about 2 1/2 cups) all-purpose flour, 100 g (about 3.5 oz) beef, 25 g (about 1/4 cup) bell pepper strips.

Seasonings

10 g shredded scallion, 10 g shredded ginger, 1 teaspoon salt, 1/2 teaspoon MSG, 2 teaspoons Shaoxing wine, 2 teaspoons soy sauce, and appropriate amounts of meat broth and vegetable oil.

Steps

1. Rinse the beef and cut it into thin strips; mix the flour with cold water and 1 g of salt to form a firm dough, knead until smooth, then roll it out into a large sheet, fold it, and cut into noodles.

2. Cook the noodles in boiling water until done, then drain and rinse under cold water, and drain well again.

3. Heat vegetable oil in a wok or large skillet over high heat, add shredded scallion and ginger, stir-fry until fragrant, then add the shredded beef and stir-fry briefly, followed by the cooking wine, and cook until the beef is fully cooked through.

4. Add the broth, salt, and soy sauce, then add the noodles and julienned green and red bell peppers, stir-frying until well combined, add MSG to taste, stir again, then remove from heat and serve in a bowl.
