Eight Immortals Noodles

Seasonings

100 g (about 3.5 oz) fresh noodles, and to taste of the Eight Immortals ingredients (shredded pork, dried razor clams, dried clams, dried shrimp, leafy greens, shiitake mushrooms, enoki mushrooms, and wood ear mushrooms).

Seasonings

Salt, MSG, shrimp paste, sesame oil, lard, and clear broth, each to taste.

Steps

1. Wash and prepare each of the Eight Immortals ingredients separately, blanch them in boiling water, then remove and drain well.

2. Heat a wok over high heat, add lard and heat until hot, then add the Eight Immortals ingredients and stir-fry briefly, followed by shrimp oil and clear broth, bringing everything to a boil.

3. Add the noodles and cook until done, then season with salt and MSG to taste, drizzle with sesame oil and shrimp oil, and transfer to serving bowls.
