Shrimp Rice Noodles

Ingredients

500 g (about 1 lb) rice noodles, 150 g (about 5 oz) peeled shrimp, 150 g (about 5 oz) trimmed Chinese chives cut into segments, 100 g (about 3.5 oz) mung bean sprouts, 50 g (about 1.8 oz) duck egg.

Seasonings

2 teaspoons salt, 3 tablespoons vegetable oil.

Steps

1. Soak the rice noodles in water until softened, then rinse and drain well; devein the shrimp, wash and clean thoroughly; trim off both ends of the bean sprouts, then rinse clean.

2. Place a clean wok over high heat, add vegetable oil and heat until hot. Briefly stir-fry the bean sprouts, then add the rice noodles and toss until well combined. Pour in the duck egg mixture and stir-fry until just cooked through and tender.

3. Add the shrimp and chive segments, stir-frying until well combined. Season with salt to taste, then remove from heat and plate for serving.
