Lotus Root Shreds Stir-Fried Noodles

Ingredients

300 g (about 10.5 oz) noodles, 100 g (about 3.5 oz) pork, 200 g (about 7 oz) fresh lotus root.

Seasonings

Salt, MSG, soy sauce, cooking wine, sugar, white vinegar, sesame oil, and vegetable oil, each to taste.

Steps

1. Cook the noodles in boiling water until done, then drain and rinse under cold water, and drain well.

2. Rinse the pork, then cut into shreds; wash the fresh lotus root, remove the joints, and cut into shreds.

3. Place a clean wok over high heat, add vegetable oil and heat until it reaches about 60% hot (when a wisp of smoke rises), then add the shredded pork and stir-fry briefly, splash in cooking wine and soy sauce, and stir well to combine.

4. Add the shredded lotus root and stir-fry evenly, then add white vinegar, sugar, salt, and cooked noodles, stir-frying until everything is well-flavored, then add MSG to taste, drizzle with sesame oil, remove from heat, and transfer to a noodle bowl to serve.
