Shrimp Yi Fu Noodles

Seasonings

150 g fresh egg noodles, 100 g shrimp, and appropriate amounts of sliced shiitake mushrooms, green peas, and sliced carrots.

Seasonings

Chopped scallions and minced ginger, a pinch of white pepper, 1 teaspoon each of salt, MSG, and sugar, 1 tablespoon each of soy sauce, Shaoxing wine, and lard.

Steps

1. Blanch the shrimp, shiitake mushrooms, carrot, and green peas separately in boiling water until tender, then drain well; cook the egg noodles in boiling water until done.

2. Heat rendered lard in a wok until hot, then aromatize the oil by stir-frying scallions and ginger. Add the ingredients and egg noodles, tossing everything together. Pour in the seasonings and cook until the flavors are fully absorbed, then remove from the wok and serve.
