Seasonings

100 g (about 3.5 oz) dried noodles, 10 wonton wrappers, 150 g (about 5.3 oz) shrimp, 50 g (about 1.8 oz) pork fat, a small amount of dried shrimp and seaweed.

Steps

1. Rinse the shrimp, then cut into small pieces; rinse the pork fat and dice it, then combine with the shrimp, fish sauce, Shaoxing wine, sesame oil, white pepper, and minced ginger, mixing well to form the filling; take one wonton wrapper, place some filling in the center, and fold to form a wonton.

2. Cook the wontons and noodles in boiling water until done, then drain and transfer to a serving bowl.

3. In a separate pot, bring the broth to a boil with dried shrimp and seaweed, season with salt and MSG, then pour the hot broth into the noodle bowl, sprinkle with chopped scallions, and serve.
