Noodles with Three Shredded Toppings

Ingredients

200 g all-purpose flour, 100 g each of shredded carrot, shredded baby bok choy, and shredded onion, 2 eggs.

Seasonings

5 g chopped scallions, 1 teaspoon salt, a pinch each of MSG and ground white pepper, 1 tablespoon each light soy sauce, sesame oil, and chili oil.

Steps

1. Place the flour in a bowl, add salt, egg, and enough water to form a dough. After resting, roll it out into a thin sheet, then cut into thin noodles.

2. Bring water to a boil in a pot, cook the noodles until done, then drain and rinse under cold water. Drain well and transfer to a serving plate. Add the shredded ingredients and seasonings, toss to combine, and sprinkle with chopped scallions before serving.
