Shandong-Style Zhajiang Noodles (Noodles with Fried Sauce)

Ingredients

200 g hand-pulled noodles, 75 g ground pork, 50 g diced cucumber.

Seasonings

25 g each of minced scallion and minced garlic, plus sweet bean sauce, MSG, sugar, and vegetable oil, all to taste.

Steps

1. Cook the hand-pulled noodles in boiling water until done, then drain and rinse under cold boiled water before draining again.

2. Heat an appropriate amount of vegetable oil in a wok until hot, first add the chopped scallions and minced garlic and stir-fry until fragrant, then add the ground meat and stir-fry briefly.

3. Then add the sweet bean paste and stir-fry until thickened, then add the diced cucumber and cook until tender.

4. Add MSG and sugar, stir-fry until well combined, then transfer to a bowl and serve alongside the noodles; when ready to eat, pour the sauce over the noodles and stir well.
