
Ingredients
500 g noodles (about 1 lb), 100 g Sichuan preserved winter vegetables.
Seasonings
Minced garlic, minced scallions, Sichuan pepper powder, soy sauce, and cornstarch, each to taste; 100 g (about 1/2 cup) each of chili oil and sesame paste.
Steps
1. Cook the noodles in boiling water until just tender but still firm to the bite, then drain well.
2. Mix together the chili oil, sesame paste, Sichuan preserved mustard greens, chopped scallions, ground Sichuan pepper, soy sauce, and minced garlic to make the seasoning sauce.
3. Place the cooked noodles in a small bowl, add a little noodle broth and the prepared sauce, toss well to combine, and serve immediately.
