Seasonings

200 g wide noodles, 250 g braised pork belly, and appropriate amounts of rehydrated wood ear mushrooms, sliced shiitake mushrooms, and baby bok choy.

Salt and pepper to taste, scallion sections, ginger slices, MSG (optional), sugar, soy sauce, cooking wine, and vegetable oil as needed, plus 750 g (about 3 cups) of stock.

Steps

1. Bring a pot of water to a boil, add the noodles and cook until tender, then drain.

2. Rinse the rehydrated wood ear mushrooms, tear them into pieces; trim and wash the bok choy hearts, then cut into small sections.

3. Heat a moderate amount of oil in a pot until hot, add the braised pork, scallion segments, and ginger slices, stir-frying until fragrant, then add the seasonings, along with wood ear mushrooms, shiitake mushrooms, bok choy, and noodles, briefly simmering everything together until done.
