Mushroom Cold Noodles

Ingredients

200 g (about 2 cups) all-purpose flour, 50 g (about 1/2 cup) dried shiitake mushrooms, 3 eggs.

Seasonings

Salt 1/2 teaspoon, powdered sugar 3 tablespoons, ketchup 100 g (about 3.5 oz).

Steps

1. Place the flour in a mixing bowl, add salt, egg, and enough water to form a dough. Let it rest, then roll it out into a thin sheet and cut into thin strips.

2. Remove the stems from the shiitake mushrooms, wash them, blanch in boiling water for 3 minutes, then drain and rinse under cold water before cutting into small pieces; in a pan, stir the ketchup to break it up, then add 2 tablespoons of powdered sugar and stir until well combined, then transfer to a bowl.

3. Bring a pot of water to a boil, cook the noodles until tender, then drain and rinse under cold water. Drain well and transfer to a deep serving dish. Top with the shiitake mushroom pieces, drizzle with ketchup, and sprinkle with powdered sugar.
