Huisao Noodles (Twice-Cooked Noodles)

Seasonings

550 g (about 1.2 lbs) cooked noodles, 40 g (about 1.4 oz) pork, dried shrimp and leafy greens to taste.

Seasonings

Shredded scallions, minced ginger, salt, MSG, soy sauce, sesame oil, clear broth, and vegetable oil, all to taste.

Steps

1. Wash the pork and greens separately, drain, and cut into thin shreds; soak the dried shrimp in warm water until softened.

2. Heat oil in a wok over high heat, add shredded scallions, minced ginger, shredded pork, and shredded greens, stir-frying until fragrant. Pour in clear broth, salt, MSG, and soy sauce, bringing to a boil. Remove the pork and greens, add the cooked noodles, drizzle with sesame oil, and top with the reserved shredded pork and greens before serving.
