
Ingredients
200 g (about 7 oz) fine dried noodles.
Seasonings
Chopped scallions and minced garlic, a pinch each, 2 tablespoons sesame paste, 1/2 teaspoon each of MSG, Sichuan peppercorn powder, light soy sauce, sugar, and chili oil, 1 tablespoon each of fragrant black vinegar and vegetable oil.
Steps
1. Stir-fry Sichuan pepper powder in a hot oil pan until fragrant; mix sesame paste with cold boiled water until smooth.
2. Combine sesame paste, rice vinegar, light soy sauce, sugar, chili oil, MSG, and Sichuan pepper powder to make the "special flavor sauce."
2. Cook the noodles in boiling water until done, drain and rinse under cold water, then place in a bowl. Pour the "special flavor sauce" over the noodles and sprinkle with chopped scallions and minced garlic.
