Three Fresh Homestyle Noodles

Seasonings

400 g (about 14 oz) noodles, 100 g (about 3.5 oz) each of shrimp and chicken breast, 50 g (about 1.75 oz) rehydrated sea cucumber, and Chinese chives, cut into segments, to taste.

Seasonings

Shredded scallions, salt, MSG, soy sauce, clear broth, sesame oil, and alkaline powder, each to taste.

Steps

1. Cook the noodles in boiling water until tender, then drain and transfer to serving bowls.

2. Rinse the water-soaked sea cucumber, chicken breast, and shrimp, then slice them thinly.

3. Place the pot over high heat, add clear broth, sliced chicken, sliced sea cucumber, sliced shrimp, shredded scallions, soy sauce, and salt, bring to a rolling boil, then skim off any foam from the surface.

4. Add MSG (or to taste), sesame oil, and chive segments, simmer briefly, then pour over the noodles in the bowl and serve.
