Noodles with Mushroom and Soy-Marinated Pork

Seasonings

200 g (about 7 oz) hand-pulled noodles, 100 g (about 3.5 oz) fresh shiitake mushrooms, 150 g (about 5.3 oz) sauced braised pork, red bell pepper and leafy greens to taste.

Seasonings

Chopped scallions, minced ginger, a pinch each of salt, MSG, and sugar, 1 tablespoon each of cooking wine, soy sauce, and vegetable oil, and 750 g (about 3 cups) of stock.

Steps

1. Rinse and prepare the shiitake mushrooms, sauced pork, and red chili pepper, then cut them into small dice; wash the greens and cut into segments; cook the pulled noodles in a pot of boiling water until done.

2. Heat oil in a wok or pot over high heat, then add minced scallion and ginger, stir-frying until fragrant. Add diced shiitake mushrooms, diced braised pork, and diced red chili pepper, stirring well. Season with salt, MSG (or omit), cooking wine, soy sauce, and sugar, then pour in broth. Add the noodles and leafy greens, cooking until everything is well-flavored and tender. Transfer to a bowl and serve.
