
Ingredients
500 g (about 1 lb) all-purpose flour, 150 g (about 5 oz) each of shredded lean pork, cooked ham, and cooked chicken, 100 g (about 3.5 oz) of green vegetable segments, and 10 g (about 1/3 oz) of shredded red chili pepper.
Seasonings
100 g shredded scallions, 2 teaspoons salt, and lard as needed.
Steps
1. Combine the flour with water to form a dough, knead until smooth and elastic, let it rest briefly, then roll out into a thin sheet and cut into thin noodles.
2. Heat a wok over high heat, add a small amount of lard and heat until hot, first stir-fry the shredded lean pork until it changes color, then add the sliced greens, cooked ham shreds, cooked chicken shreds, shredded scallions, shredded red chili peppers, and salt, and stir-fry everything together to form the topping mixture.
3. Heat oil in a wok until hot, add the noodles and stir-fry until golden brown, pour off excess oil, then add the stir-fried toppings and braise for about 1 minute before serving.
