Chuncheon Mixed Noodles

Seasonings

Buckwheat noodles, shredded seaweed, shredded cucumber, shredded carrot, all to taste, half a hard-boiled egg, and a pinch of toasted sesame seeds.

Seasonings

Garlic, sugar, soy sauce, rice vinegar, and Korean chili paste, each to taste.

Steps

1. In a bowl, combine soy sauce, rice vinegar, minced garlic, toasted sesame seeds, sugar, and gochujang (Korean chili paste), then stir until smooth to create the sauce.

2. Place a pot over heat, add enough water to bring to a boil, then cook the noodles until done. Remove, rinse under cold water, and drain well.

3. Transfer to a large bowl, top with shredded cucumber, carrot, and seaweed, then pour in the prepared dressing and toss everything together until well combined.
