Seasonings
Scallion sections, ginger slices, Sichuan peppercorns, star anise, salt, MSG, and chicken powder, all to taste.
Steps
1. Combine the flour with salt and water to form a dough, let it rest, then roll it out into a thin sheet and cut into noodles.
2. Rinse the old hen clean, place it in fresh water, add scallions, ginger, Sichuan peppercorns, and star anise, and cook for about 1 hour until fully tender; remove the chicken and cut it into small cubes.
3. Add the chicken broth to the pot, bring to a boil, and cook the noodles until tender. Season with salt, MSG, and chicken powder, stirring until well incorporated. Add the diced chicken and cook briefly, then ladle everything into bowls and serve.
