Fruitcake

Ingredients

250 g eggs, 200 g cake flour, 200 g margarine, 125 g orange, 50 g pineapple.

Seasonings

150 g (about 3/4 cup) white sugar, 40 g (about 3 tablespoons) vegetable oil, 25 g (about 2 tablespoons) raisins, 25 g (about 2 tablespoons) rum, 15 g (about 1 tablespoon) milk, 5 g (about 1 teaspoon) baking powder.

Steps

1. Slowly beat white sugar, margarine, and rum together for 2 minutes. Gradually add the beaten eggs in 3 batches, beating slowly for 3 minutes until the mixture is light and fluffy. Add cake flour, baking powder, milk, vegetable oil, and raisins, then beat on high speed for about 5 minutes until a thick cake batter forms.

2. Brush a baking pan with a little vegetable oil, pour in the cake batter and spread it evenly, then bake in a preheated oven at 180°C (350°F) for about 35 minutes until cooked through; remove from the oven, garnish with orange pieces, pineapple chunks, and cream rosettes, then cut into bars and serve.
