Pine Nut Cookies

Seasonings

210 g (about 1 3/4 cups) all-purpose flour, 30 g (about 1/4 cup) cornstarch, 50 g (about 1/3 cup) pine nuts, 20 g (about 1 1/2 tablespoons) egg, 60 g (about 1/3 cup) granulated sugar.

Seasonings

1 g salt, 250 g (about 2 sticks) butter, 2 g vanilla extract.

Steps

1. Mix the butter and sugar together, stirring for about 5 minutes.

2. Add the egg and mix until well combined.

3. Then add the dry ingredients and mix evenly by hand, being careful not to overmix to avoid developing the gluten.

4. Roll the dough into a log shape about 4 cm (1.5 inches) in diameter, then cut into small pieces, each weighing 15 g (about 0.5 oz).

5. Place pine nuts on the surface, gently press them down with your fingers, and arrange them neatly on the baking sheet.

6. Place in the oven and bake at 160°C (about 320°F) for approximately 15 minutes, then remove and decorate as desired.
