Mickey Mouse Cookies

Ingredients

200 g all-purpose flour, 20 g egg white.

Seasonings

80 g (about 6 tablespoons) white sugar, 2 g (about 1/4 teaspoon) salt, 130 g (about 9 tablespoons) butter, 2 g (about 1/2 teaspoon) vanilla extract.

Steps

1. Mix the butter and sugar together, stirring for about 5 minutes, then add the egg whites and vanilla extract and mix well. Add the flour mixture and stir by hand until just combined, being careful not to overmix to avoid developing the gluten.

2. Roll the cookie dough into a 0.5 cm (about 1/4 inch) thick rectangular sheet, cut into Mickey Mouse shapes, arrange neatly on a baking sheet, and bake in a preheated oven at 170°C (340°F) for 12 minutes; once removed, lightly decorate the surface as desired.
