Ladyfinger Biscuits

2 egg whites, 20 g (about 1.5 tablespoons) granulated sugar, 2 egg yolks.

20 g white sugar, 35 g all-purpose flour.

Steps

1. Whip the egg whites and granulated sugar until stiff peaks form.

2. Beat the egg yolks and granulated sugar together until pale and fluffy.

3. Combine the egg white mixture and egg yolk mixture in a bowl and stir until evenly mixed, then add the flour and stir to form the cookie batter.

4. Transfer the batter into a piping bag, pipe into finger-length strips about 8 cm (3 inches) long, then bake in a preheated oven at 180°C (350°F) for 10 minutes, remove and serve.
