Green Tea Cookie Sticks

Seasonings

300 g (about 2 1/2 cups) all-purpose flour, 20 g matcha powder, 110 g (about 1/2 cup) granulated sugar.

2 g salt, 60 g (about 2 large) egg, 220 g (about 1 cup) butter.

Steps

1. Mix the butter and sugar together, stirring for about 5 minutes, then add the egg and mix until well combined. Add the dry ingredients and mix by hand until just incorporated, being careful not to overmix to avoid developing the gluten.

2. Place the cookie dough into a piping bag, pipe into 6 cm (about 2.5 inch) long strips, then bake in a preheated oven at 180°C (350°F) for 12 minutes. Remove from the oven and serve.
