Ingredients
250 g soybean sprouts, 30 g shad, 5 cups cooked rice, 10 cups water.
Seasonings
3 tablespoons sesame seeds, 3 tablespoons shrimp paste, 2 tablespoons chili flakes, 2 tablespoons soy sauce, 20 g (about 1/2 cup) scallions, 20 g (about 4 cloves) garlic, 1 tablespoon sesame oil.
Instructions
1. In 10 cups of water, make a shad fish stock and combine it with the broth from cooking the soybean sprouts; trim the ends off the soybean sprouts, cook them in 3 cups of water until tender, then drain and toss with seasonings.
2. Place the rice in an earthenware pot, then top with salted shrimp, scallions, garlic, and soybean sprouts. Pour in plenty of broth and soy sauce, then simmer. When serving, garnish with sesame seeds, sesame oil, and chili flakes.
