Ingredients
1000 g (about 2.2 lbs) fresh dog meat.
Seasonings
40 g scallions, 15 g ginger, 75 g vegetable oil, 2.5 g white pepper, 50 g cooking wine, 10 g toasted sesame powder, 2 g MSG (or to taste), 20 g salt.
Instructions
1. Remove the skin from the scallions, wash them, and cut into sections; peel the ginger, wash it, and slice it; set aside.
2. Wash the dog meat with cold water, then soak it in fresh cold water for a full day. Remove the meat, rinse thoroughly, and drain well. Cut into 1 cm (about 1/2 inch) cubes. Place the cubes in a pot, cover with cold water, and bring to a boil. Remove the meat, rinse under cold water three times, and drain well.
3. Heat vegetable oil in a pot, add the diced dog meat and stir-fry over high heat for 4 minutes, then splash in cooking wine. Once the liquid has evaporated, add ginger slices, scallion pieces, salt, and about 1000 ml (4 cups) of water. Bring to a boil, skim off any foam, then reduce to a low simmer and cook until tender. Finish by adding MSG, white pepper, and toasted ground sesame seeds.
