Japanese Cold Noodles

Learn how to make authentic Japanese cold noodles with green seaweed, a savory soy-wasabi dipping sauce, and chilled nori.

Ingredients

5 cups water, 1 package Japanese imported green seaweed noodles, toasted nori strips to taste.

Seasonings

Soy sauce 1 cup, sugar, MSG, and wasabi paste each to taste.

Instructions

1. First, bring water, soy sauce, sugar, and a pinch of MSG to a boil, then let it cool and chill in the refrigerator until needed.

2. Bring water to a boil, add the dried noodles, and once boiling again, reduce to low heat and cook for about 10–12 minutes. When done, rinse the noodles under ice water until cooled. Keep wasabi and shredded seaweed in the refrigerator until ready to serve.

3. When serving, add wasabi and shredded nori (seaweed) to the dipping sauce according to personal taste.

4. Dip in the prepared cold noodle sauce and serve.
