Pumpkin Mash

Ingredients

1500 g (about 3.3 lbs) old pumpkin, 4 cups glutinous rice flour, 1 cup each of glutinous millet flour, peas, and red beans, 1/3 cup all-purpose flour, 10 cups water.

Seasonings

4 teaspoons of salt.

Instructions

1. Wash the old pumpkin thoroughly, cut it into four pieces, remove the seeds, and place them cut-side down in a flat pot. Wash the red beans and peas, add them to the pot with water, and cook until tender. After boiling for 20-30 minutes, once the pumpkin is soft and mushy, continue cooking the red beans and peas. Remove the pumpkin and scrape out the flesh with a spoon.

2. Continue cooking the scraped pumpkin in a flat pot. Once the red beans and peas are soft and mushy, add glutinous rice flour and glutinous millet flour, stirring to combine. If the mixture is too thin, you can add a little wheat flour. Season with salt. To prevent sticking to the bottom, stir continuously while cooking. After 30 minutes, reduce the heat to low and let it simmer, then it's ready to serve.
