Korean Mixed Vegetable Pancakes

Ingredients

Onion, leafy greens, potato, and carrot, with flour to taste.

Seasonings

To taste: gochujang (Korean chili paste).

Instructions

1. Finely chop the greens; cut the potato, carrot, and onion into thin strips.

2. Add flour and salt to the greens, potatoes, and carrots, then stir to form a batter.

3. Heat a non-stick pan over medium heat, add a little oil, ladle in a large spoonful of batter, and slowly cook until both sides are golden brown. Serve with chili sauce for dipping.
