Ingredients
Fresh Chinese chives to taste (or any other green vegetables you prefer), 1 egg, and all-purpose flour to taste (about half a rice scoop).
Seasonings
Chopped scallion and garlic chives, 1/2 stalk each, salt and dried shrimp to taste, chicken bouillon powder as needed.
Instructions
1. Finely chop the scallions and garlic chives; cut the Chinese chives into roughly 3 cm (about 1-inch) pieces; mince the dried shrimp.
2. Beat the eggs until smooth, add a little water, then slowly pour into the flour while stirring until well combined, then mix in all the other ingredients.
3. Pour a small amount of peanut oil into a frying pan over medium-high heat. Once the oil is hot, pour the egg batter into the pan and cook until golden brown on both sides. Cut into portions and serve.
