Ingredients
1 fresh squid, 1 cucumber.
Seasonings
1 tablespoon chili paste, 1 tablespoon chopped green onion, 1 tablespoon sugar, 1/2 tablespoon vinegar, 1 teaspoon chopped garlic, 1 teaspoon sesame seeds, and 1 teaspoon salt.
Instructions
1. Cut the cucumber crosswise, then slice it lengthwise into thin strips, and soak them in salted water. Remove the innards, tentacles, and skin from the squid, wash it clean, cut it into 1 cm wide pieces, and soak them in salted water. In a bowl of gochujang (Korean chili paste), mix in chopped scallions, minced garlic, sugar, vinegar, sesame seeds, and salt, then stir well.
2. Rinse the saltwater-soaked raw squid and cucumber, drain well, then place them in a large bowl, add the seasoning sauce, and toss to combine.
