Grilled Sea Bass with Soy Bean Paste

Ingredients

10 g (about 1/3 oz) soaked vermicelli noodles, 1 g chili powder, 200 g (about 7 oz) sea bass.

Seasonings

20 g scallions, finely chopped, 10 g soy sauce, 5 g garlic, minced, 3 g each ginger juice and sesame oil, 0.2 g ground white pepper, 0.5 g each ground sesame seeds and chili flakes, and a small amount each of lemon and cucumber.

Instructions

1. Slice the sea bass fillets into 0.3 cm (about 1/8 inch) thick pieces.

2. In the soy sauce, mix together scallions, garlic, ginger juice, chili powder, ground pepper, ground sesame seeds, and sesame oil to make the seasoning paste.

3. After marinating the sea bass fillets in the seasoning sauce for 15 minutes, brush them with more sauce, thread them onto metal skewers, and grill until cooked through; then arrange the grilled sea bass on a plate and garnish with lemon and cucumber.
