Ingredients
4 braised shiitake mushrooms, 2 slices of daikon radish, 2 pickled mustard green leaves, steamed rice as needed, 2 okra pods, assorted fresh fruit as needed, half a sheet of nori (dried seaweed).
Seasonings
1/3 cup rice vinegar, 2 tablespoons sugar, 1 tablespoon salt, plus vinegar, pickled ginger, sushi vinegar, soy sauce, and wasabi to taste.
Instructions
1. Blanch the okra, then rinse under cold water to cool.
2. Bring the sushi vinegar to a boil, then let it cool before mixing it into hot steamed rice; stir well, then shape the rice into small rice balls, spread a little wasabi on each, and top with various vegetable and fruit ingredients—if they tend to slide off, secure them by wrapping with a strip of nori seaweed.
