Ingredients
500 g (about 1 lb) beef tripe.
Seasonings
Vinegar and scallions, 20 g each; ground sesame salt, 3 g; sesame oil, garlic, and sugar, 10 g each; chili powder, 2 g; pine nuts, 5 g.
Instructions
1. Rub the beef tripe clean with coarse salt, then soak it in cold water to remove any odor. Squeeze out the water, cut the tripe into thin strips, and rinse once more with vinegar.
2. Add sesame seeds, vinegar, sugar, chili flakes, sesame oil, scallions, and garlic to the beef tripe and toss well. Transfer the raw seasoned tripe to a serving plate, top with pine nuts, and serve alongside chili peppers and a sweet-and-sour dipping sauce. Also serve the raw seasoned liver on the side.
