Ingredients
Chicken, fish, and clams, 40 g (about 1.4 oz) each, half a lemon, bean sprouts to taste, 4 fresh shiitake mushrooms.
Seasonings
Salt 2/3 teaspoon, light soy sauce to taste.
Instructions
1. Cut the bean sprouts into segments; wash and slice the chicken and fish; cut the lemon into 4 slices; wash the clams and fresh shiitake mushrooms and set aside.
2. Marinate the chicken with 1/8 teaspoon of salt, then blanch the fish and clams separately in boiling water and drain.
3. Place chicken, fish, clams, and shiitake mushrooms in a teapot and bring to a boil. Cover and transfer to a steamer, then steam over high heat for 3 minutes. Remove, sprinkle with bean sprouts, and cover immediately. Serve hot with a squeeze of lemon juice.
