Bamboo Fungus and Lotus Seed Sweet Soup

Ingredients

50 g dried lotus seeds, 20 g red dates, 15 g dried bamboo fungus.

Seasonings

Sugar to taste.

Steps

1. Soak bamboo fungus in clean water for 1 hour until rehydrated, then rinse and drain. Trim off both ends, cut into long strips, blanch in boiling water for 5 minutes, remove and rinse under cold water, then drain well.

2. Rinse the red dates and remove the pits; soak the lotus seeds until softened and remove the bitter cores.

3. Place a clean pot over high heat, add enough water and bring the lotus seeds to a boil, then reduce the heat to low and simmer for about 20 minutes. Add the red dates and bamboo fungus segments, continue cooking for another 20 minutes. Skim off any foam, stir in sugar to taste, remove from heat, and pour into a large bowl to serve.
