Hami Melon and Orange Sweet Soup

Ingredients

500 g (about 1 lb) Hami melon, 200 g (about 7 oz) navel orange, 50 g (about 1.75 oz) white wood ear mushroom (also known as snow fungus).

Seasonings

Rock sugar, to taste.

Steps

1. Peel and deseed the cantaloupe, rinse and drain, then cut into small cubes; peel the orange and separate into small segments.

2. Soak the white fungus in warm water until softened and expanded, then remove, trim off the tough stems, tear into small florets, blanch in boiling water, and drain well.

3. Place a pot over high heat, add enough water and bring the white fungus pieces to a boil. Skim off any foam, then reduce the heat to low and simmer for about 20 minutes.

4. Then add the cantaloupe chunks and fresh orange segments, continue cooking for 5 minutes, then add rock sugar and cook until dissolved, then remove from heat and serve in bowls.
