Loquat and Almond Sweet Soup

Ingredients

100 g loquat, 10 g dried almonds.

Seasonings

Rock sugar, to taste.

Steps

1. Peel the loquats, remove the pits, rinse them under clean water, then cut into small pieces.

2. Soak the almonds in a bowl with warm water, then remove and peel off the skins. Blanch them briefly in boiling water, then drain and rinse under cold water, letting them dry thoroughly.

3. Place a clean pot over high heat, add enough water and bring to a boil with the loquat pieces and almonds, then reduce to medium heat and simmer for about 30 minutes, then add rock sugar and cook until dissolved, then remove from heat and serve.
