Longan Poached Eggs

Ingredients

10 longan fruits, 2 eggs, 500 g (about 2 cups) water.

Seasonings

30 g (about 1 oz) rock sugar.

Steps

1. Place the eggs in a pot of cold water, bring to a boil over heat, and cook until hard-boiled. Remove and peel off the shells.

2. Add water to the pot, then add the eggs and longan. Bring to a boil over high heat, then reduce to low heat and simmer for 10 minutes.

3. Finally, add rock sugar and cook until dissolved, then turn off the heat and let it cool before serving.
