Braised Mushrooms with Pork

Ingredients

300 g oyster mushrooms, 150 g pork, 75 g garlic cloves.

Seasonings

1 teaspoon salt, a pinch of white pepper, 3 tablespoons cornstarch slurry (cornstarch mixed with water), 100 ml (about 1/2 cup) fresh stock or broth, 75 g (about 1/3 cup) lard or rendered pork fat.

Steps

1. Rinse the pork, slice it, then mix with water starch and salt to coat and marinate; peel the garlic cloves and rinse; clean the oyster mushrooms and tear them into large pieces.

2. Place the wok over high heat, add lard and heat until hot, then add garlic cloves and stir-fry until fragrant, then add the sliced meat and stir-fry until separated.

3. Then add the oyster mushrooms, pour in fresh broth, and season with ground white pepper and salt. Cover and braise for about 4 minutes, then remove the lid and thicken with a cornstarch slurry. Transfer to a serving plate and serve.
