Shrimp 300 g (about 10 oz), eggs 3.
Seasonings
15 g each of minced scallion and ginger, 1/2 teaspoon each of salt and Shaoxing wine, broth as needed, 2 tablespoons of water starch, and 5 tablespoons of vegetable oil.
Steps
1. Wash the shrimp, devein them, then add salt, cooking wine, 1 egg white, and 2 g cornstarch. Mix well to coat evenly.
2. Crack 2 eggs into a bowl, add a pinch of salt and beat until well combined. Pour into an oiled pan and cook until about half set, then add the shrimp and stir-fry everything together until just cooked through. Transfer to a plate and serve.
