
Ingredients
Pork 450 g (about 1 lb), asparagus lettuce 50 g, pickled red chili peppers 30 g.
Seasonings
15 g each of minced scallion, ginger, and garlic; 1 tablespoon each of salt and white vinegar; 1/2 teaspoon each of MSG and sugar; 2 teaspoons each of soy sauce and water starch; 2 tablespoons each of Shaoxing wine, fresh stock, and vegetable oil.
Steps
1. Rinse the pork and cut into small cubes, then coat with salt and cornstarch slurry; peel the asparagus lettuce and cut into cubes, lightly salt and set aside; mix salt, sugar, soy sauce, white vinegar, MSG, cooking wine, cornstarch slurry, and fresh broth to create the seasoning sauce.
2. Heat oil in a wok until hot, first add the diced pork and stir-fry until separated, then add scallions, ginger, garlic, and pickled red chilies, stir-frying until fragrant and colored, then add the diced asparagus lettuce and stir-fry to combine, finally pour in the seasoning sauce and stir-fry until the sauce thickens, then remove from the wok and plate.
