Stir-Fried Winged Beans

Ingredients

250 g (about 1/2 lb) winged beans.

Seasonings

25 g garlic cloves (sliced), 1 teaspoon each of fine salt and MSG, 2 tablespoons vegetable oil.

Steps

1. Wash the winged beans, trim off the ends, and slice diagonally into thin pieces. Blanch in boiling water with a pinch of salt and a drizzle of vegetable oil for 20 seconds, then remove and plunge into cold water to cool. Drain well.

2. Place a wok over high heat, add oil and heat until it reaches about 70% hot (just starting to smoke). First, add half the sliced garlic and stir-fry until fragrant, then add the winged beans and stir-fry briefly. Add salt and MSG (or chicken powder), continue stir-frying until the beans are cooked through. Finally, add the remaining sliced garlic and toss everything together evenly before removing from the wok and plating.
