Ingredients
Chicken 400 g (about 14 oz), dried chili pepper segments 25 g (about 1 oz).
Seasonings
10 g scallion segments, 5 g each minced ginger and Sichuan peppercorns, 2 teaspoons sugar, 3 tablespoons soy sauce, 1 tablespoon Shaoxing wine, 1 teaspoon sesame oil, 500 g vegetable oil (about 50 g will be absorbed).
Steps
1. Rinse the chicken and cut it into small cubes. Place in a bowl, add a splash of cooking wine, soy sauce, scallion segments, and minced ginger, then mix well and marinate for 10 minutes. Next, deep-fry the chicken in hot oil until the moisture is gone, then remove and drain the oil.
2. Heat oil in a wok until hot, add Sichuan peppercorns and dried chili segments and toss until fragrant, then add soy sauce, sugar, and cooking wine, stir-frying until evenly seasoned, then drizzle with sesame oil and stir to combine before transferring to a serving plate.
