Colorful Bell Pepper and Fresh Shrimp Stir-Fry

Ingredients

300 g (about 10.5 oz) shelled shrimp, 50 g (about 1.75 oz) each of bell peppers (red and yellow), shiitake mushrooms, and snow peas, 100 g (about 3.5 oz) cashews.

Seasonings

15 g each of minced scallion and ginger, 1/2 teaspoon each of salt, ground white pepper, chicken bouillon powder, and sesame oil.

Steps

1. Wash the bell peppers thoroughly, drain well, and cut into small dice.

2. Add a small amount of vegetable oil to the pan, then stir-fry the shrimp along with minced scallion and ginger.

3. Add the bell peppers, then season with cooking wine, salt, pepper, and chicken bouillon. Add the mushrooms and snow peas, and stir-fry for a moment.

4. Just before removing from heat, sprinkle in cashews and drizzle with sesame oil.
