Dry-Fried Bitter Melon

Ingredients

Two bitter melons (about 400 g / 14 oz), 100 g (about 3.5 oz) ground pork, 20 g (about 2 tablespoons) preserved mustard greens.

Seasonings

5 g dried chili peppers, a pinch of salt, and MSG and vegetable oil to taste.

Steps

1. Wash the bitter melon thoroughly and cut it into small strips.

2. Place a pot over heat, add enough water to bring to a boil, then blanch the bitter melon strips briefly, remove, and drain.

3. Heat oil in a wok until it reaches about 70% hot (just starting to smoke), add dried chilies and stir-fry until fragrant, then add the ground meat and stir-fry to break it apart, then add the preserved mustard greens and stir-fry until cooked through.

4. Finally, add the bitter melon strips, MSG, and salt, and stir-fry until well combined.
