
Ingredients
300 g (about 10.5 oz) rehydrated duck feet, 20 g each of green and red hot peppers.
Seasonings
10 g scallion white, 1 teaspoon salt, 1/2 teaspoon MSG, a pinch of white pepper, and appropriate amounts of water starch and chili oil.
Steps
1. Rinse the duck feet clean, cut them into pieces, blanch them in a pot of boiling water, then remove and drain.
2. Remove the stems and seeds from both the red and green chili peppers, wash them, and slice into pieces; wash the white part of the scallions and slice into pieces.
3. Place a wok over high heat, add chili oil and heat until hot. Add scallion whites, red chili peppers, and green chili peppers, and stir-fry briefly. Then add duck feet, salt, white pepper, and MSG, and stir-fry until well-seasoned. Thicken with a cornstarch slurry and serve.
