
Ingredients
400 g chicken breast, 50 g each of green bell pepper slices and red bell pepper slices.
Seasonings
5 g sliced garlic, a pinch of salt, 2 teaspoons soy sauce, 1 tablespoon Shaoxing wine, 1 teaspoon rice vinegar, and sesame oil, cornstarch, and vegetable oil, each to taste.
Steps
1. Rinse the chicken, cut into bite-sized pieces, then toss with salt, a splash of Shaoxing wine, and cornstarch to coat evenly. Deep-fry in hot oil until the color changes, then remove and drain on paper towels.
2. Heat oil in a wok over high heat, add garlic slices and stir-fry until fragrant, then add green and red bell pepper slices and briefly stir-fry, add the chicken cubes and stir-fry for a moment, season with salt, soy sauce, cooking wine, and rice vinegar, stir-fry everything together over high heat until well combined, drizzle with sesame oil, then remove from heat and plate.
