
Ingredients
200 g Chinese chives (yellow chives), 100 g peeled shrimp, 3 eggs.
Seasonings
Salt and MSG to taste, 5 teaspoons vegetable oil.
Steps
1. Trim and wash the chives, drain well, and cut into segments; beat the eggs to make the egg mixture; blanch the shrimp in boiling water, then drain.
2. Heat vegetable oil in a wok over medium heat until it reaches 350°F (180°C), then add the beaten eggs and stir-fry until set into fluffy curds, then remove from the wok.
3. In a separate wok, heat vegetable oil until hot, then add the chives and shrimp, stir-frying briefly. Add the scrambled eggs, salt, and MSG, tossing everything together until well combined and infused with flavor. Drizzle with a splash of oil for sheen, then transfer to a serving plate.
