Stir-Fried Baby Squid with Two Peppers

Seasonings

300 g cleaned baby squid, with a small amount each of red bell pepper slices and green bell pepper slices.

Seasonings

Chopped scallions and sliced garlic, 5 g each; salt and sugar, 1/2 teaspoon each; MSG and chili oil, 1 teaspoon each; cornstarch slurry, 2 tablespoons; vegetable oil, 25 g (about 2 tablespoons).

Steps

1. Place a pot over heat, add enough water to bring to a boil, then blanch the squid until nearly cooked through.

2. Heat vegetable oil in a wok until hot, then stir-fry scallions and garlic slices until fragrant. Add the squid, red bell pepper slices, and green bell pepper slices, along with salt, sugar, and MSG to taste. Stir-fry vigorously over high heat until well combined and seasoned. Thicken with a cornstarch slurry, drizzle with chili oil, and transfer to a serving plate.
